Tabbouleh (vegetarian Mediterranean Salad)

There's been loads of exciting cooking happening at my end. I am out and about trying out various cuisines with the availability of the simple ingredients found in the stores within my radius.

Tabbouleh https://en.wikipedia.org/wiki/Tabbouleh was a dish that I had bookmarked for long and when I sourced all the right veggies and gathered all the patience as well, I decided I must prepare and bring this Jugalbandhi into full force.

I have included my beer batter chicken (recipe to be updated) as a side and protein, it is totally optional! This meal is quite filling on its own and I am positive that there won't be much or any midnight snacking!!!

 This small pack made three good servings. Loved the wheat groats and with the addition of finely chopped mint, cilantro (do not compromise on both those herbs!), tomatoes, red cabbage, green bell peppers, cucumbers and onions (I ran out of onions at home) this made an extremely nutritional dinner! Loads of fibres that would keep us full for long.

 Please follow the instructions on your pack. Mine said to pour in 200 ml of hot water into this bulgar wheat and close it and leave it undisturbed for a while. After a while, fluff it out with a fork and drizzle in olive oil.


I added olives as well to dance to the tune of the Mediterranean feel and taste. The pack may have salt in it, but I did add more salt and squeezed in lemon juice after tasting it.
 I also drizzled in a bit more olive oil...that's Turkey or Lebanon on a mezze for you :)
 Mix well and ensure that the wheat is coated well with all the finely chopped veggies. Have it cold. It is a salad, the colder it is the tastier it is. As seen in the picture I did add a few rubies of pomegranate seeds as well to give it a lovely appearance. Please do excuse me for all the cell phone uploads!
