Spinach Soup, Ahoy there Popeye!!!

 First of all please do not get upset viewing my old vessels. It's not picture perfect but neither is my mood these days. The sun has hurt and burnt my skin badly and my skin allergies have worsened as well. I do my own dishes, hence scrubbing them such that they shine and sparkle is not my forte with my skin issues on my hands as well.

The picture above shows some stock that I collected to prepare my soup. I just scooped out the water in which my Kerala rice dumplings were cooking in. It made a nice stock and I didn't have to prepare any extra broth. This served the purpose as it was rice dumplings that morning! Washed and cleaned a nice bunch of spinach. I had a left-over carrot in the fridge, used that as well! Chopped them and added them into a saucepan with a tbsp. of butter along with a finely chopped onion, a bay leaf  and a clove or two of garlic. Once it was cooked, I added some of this stock and later allowed it to cool. Once cooled, extract the bay leaf from the mixture, the spinach-carrot was processed well in the grinder along with its water. Do no grind it when it is extremely hot, please allow the mix to cool completely! In a separate heavy bottom pan take half a cup of milk and a third of a cup of cream and add to it a tbsp. of corn flour and whisk them well such that there are no lumps in them. Place this vessel with its contents on the stove and warm it a bit.
 The milk- cream mixture will thicken owing to the corn starch/corn flour in it. Switch off the flame, do not let the mixture burn. Season it with freshly ground pepper, chilly vinegar, chilly flakes and salt to taste (whatever you like in your soups)
 Place the ground spinach mixture in the same saucepan and allow it to boil further. Once it cooks further, drizzle in the seasoned milk-cream mixture into it and cook on a very low flame and switch off after a second or two.
 Your healthy soup is done! Pour some fresh cream in a clockwise or anticlockwise pattern (optional) or serve a few croutons over the soup or a few soup sticks as a side.
