New Kid In Town (vegetarian)-My respect to the departed souls the past week from the music world.
With many great singers departing from our midst-David Bowie, Glen Frey...Cancer you seem to be rocking and having a ball of a time. Somehow your tragic music is playing louder than the songs we've memorized as kids... Sometimes I fear I hear my death knell too...cancer was there in the family...all the more reason to feel apprehensive.
Recently I reconnected with a buddy of mine from our school days. We've been in touch since late 2010 or early 2011 via email but with the latest in technology, we've been able to share so much more in real time since 2015. She is a cancer survivor and I love all the pictures she shares with me from across the world. She seems a lot more happier in comparison to my serious face and has such a bright smile on her face whenever she poses with her siblings, parents or her own kids. There's a lot of positive energy I draw from her pictures. Love all her paintings which she had done as a part of her therapy.
Love her spirit. She writes in detail about her children and the activities they do. I have not been very good at sharing pictures as it is quite difficult to get the family to pose!
So here I am listening to the Radio in the back drop paying their tribute to Glen Frey of the Eagles. Here's to the haunting music which has had such an impact on us both in terms of its music and lyrics.
R.I.P beautiful souls who have rendered your voices and music to make life meaningful for many of us.

Just made my simple vegetarian dinner with scooped out cucumber slices. Filled the cavities with lightly sautéed baked beans(canned) I did add a few Indian spices to bring in some flavour. Rested them over lettuce leaves.
Rolled them in the leaves and had them like so. Alternatively you can have these filled cucumber slices on plain Cream Crackers. You can serve them as appetizers when your friends/guests turn up unexpectedly. Added finely chopped cilantro as a nice garnish.
They make perfect Hors d'oeuvres on the crackers.
