Chocolate-Vanilla Loaf ( A Nita Mehta Recipe)

This would probably be my official first post for the year 2016 although I had been yapping away on my facebook -(The Inconsistent Chef ) page from time to time.

I was back home with my children after nearly a two months break away from here. It's once again time to bid adieu to them as they set forth on their new journeys this year. I was not able to return in time owing to the deluge and the aftermath of the floods in Chennai but I did have a lot of house work on my return.

This return was such a blessing in many ways of which I would love to highlight this very particular point of how my boys took it upon themselves to help me get the home back to how it was. As it had been shut down for a while, things did go very wrong inside since the floods... owing to lack of sunlight and sufficient ventilation. We were warned of these consequences much ahead of time by those who remained behind and those who managed to escape the floods in the nick of time to be safe as a family and returned to their equally abandoned homes.

We had such a task at hand on our return but I am glad that I was able to see my boys under a very different kind of light-the three of us in gloves and masks and a couple of daylight hours to our advantage managed to get back our home spic and span without any external help.

We had food on our table and clean beds to sleep on by the end of the day. I am so grateful that they did not slack despite the long journey and I do take credit for that upbringing! It was such a proud moment to share with the husband over phone.

 When they were younger, they would accompany me after every visit to their father and just get back to viewing their favourite shows on TV or would catch up on their books or games...but this trip was such bliss and a boon in many ways. We bonded as a family in many ways... I guess this is how kids blossom, mature and bloom and handle responsibilities while we take the back stage as we grow older.

I had a couple of people to thank on my return. Fruit cakes went out to one or two and this eggless bake went out to the other. I loved the look of this recipe and have done it with eggs earlier. This was specifically chosen to suit the taste of the friend.



The fruit cakes that went out to a friend or two and to those ladies who huddle as a group on the streets where we feed the needy.

 
The eggless bakes were an inspirational bake. Found these beads lying across my work area as a part of my bead collection and thought I needed to do something to colour coordinate and give away as a token of gratitude to this friend who has only eggless bakes.


The recipe is a Nita Mehta recipe-Chocolate Vanilla Loaf. I did not prepare them as loaves instead used two of my favourite pans.



The Dry Ingredients such as 125g of flour ( 1 1/4 C), 3/4 tsp. of baking powder and 3/4 tsp. of Baking soda were sieved and set aside.

Half a tin of condensed milk along with two tbsp. of powdered sugar and a tsp. of vanilla essence were mixed with the help of a hand beater. To that half a cup of oil was streamed in and blended in well.

Set aside a tbsp. of cocoa powder as we would be adding that to a part of the batter once the wet and dry are incorporated.

Add the flour and half a cup of milk (100 ml) in parts to the condensed milk mixture. Now you have before you the wet and dry ingredients mixed well to form a nice and fluffy batter. Divide this batter into two parts and to one part add that tablespoon of cocoa powder. Ta da! If mixed well you now have in front of you a vanilla batter and a chocolate batter.

You may preheat the oven to 150 degrees C /300 degrees F. Pour the batter in a loaf tin for a better appearance pouring the chocolate batter over the vanilla one in the tin such that they form two almost perfect layers. I allowed mine to merge in a bit.

Bake the cake in the preheated oven for about forty minutes or until a skewer/toothpick when inserted in the centre of the bake comes out clean.
Enjoy the bake! This serves six to eight people if baked as a loaf.
