Caramelised Onion Wheat Parathas (with oregano seasoning)
I love onions in any form. Our family loves them raw in salads or in a raitha.
In a fresh salad with that nice squeeze of lime lifts any salad to a tastier level. I am going back to my parathas today as well. Another healthy day with parathas minus the butter/oil and ghee.
But I must shamefully admit that a bit of butter and oil did go into the sliced onions to caramelize them. I have sliced around three onions and in a saucepan goes in a bit of butter and a nice drizzle of oil. The sliced onions were thrown into the saucepan and by adjusting the heat and flame, I got them from this pretty pink complexion to a very tanned version which is soooooooooo Yumm!
I had kneaded my dough with the usual suspects a bit of oil, salt, water, a tsp. of cumin seeds and the wheat flour/Atta.
Rolled them as mentioned in my previous post on the Mint parathas. Flattened them out and shaped them as fans and rolled them back into a round mass in which you can see the layers.
The layers are seen above. The caramelised onions are seen below. I wasn't as patient to caramelise them well and this would do for me hence, I browned them like so and allowed it to cool completely. I did not add any additional salt as my dough has salt but feel free to do so. Also if your butter is salted, do skip the salt. I also added a nice sprinkle of oregano just because it was calling out to me from my spice cabinet to use it.
A little Italy is already created in that saucepan with the smell of that oregano!
Took one of my balled up layered paratha ball, stuffed a nice spoonful into the cavity I made and then brought the dough back together as a ball and flattened them out like so.
Once flattened, cook them on a hot griddle. Dab oil or butter as per your desire.
These are very filling and truly don't need any side accompaniments. You can keep atleast three of these in your child's tiffin box for his school lunch and kneel down and pray that he/she brings home a clean box back home. I did have it with a bit of lime pickle/achaar. The picture below gives you a glimpse of the layers and the stuffed caramelised onions.
That oregano seasoning is extremely luring for kids these days as it would definitely remind them about Pizzas.
