Pepper Mushrooms
You may half or quarter the mushrooms and set aside. Thinly slice onions and any coloured bell. I used yellow. In a saucepan, sauté the sliced onions, throw in a few/more (as per your liking) whole peppercorns as well as a few crushed ones as this spice is the hero of the dish. As they combine, add in half a sliced tomato along with a tsp. of turmeric, fresh ginger and whole garlic pods. Stir through. Add a glug of Worcester sauce and in that sauce the mushrooms cook with adequate salt.
Finish the dish with spring onions, split green chillies and sesame seeds.
Thus as the Worcester sauce reduces, the mushroom happily blooms and blossoms. Check for seasoning and serve it piping hot. Garnish with a few juliennes of ginger.
I did an encore of this dish with potatoes, mushrooms and a few peas today and it was a hit with the family again.
