Vegetable Oats Dumplings/Kozhukkattas
This is an old post that I did quite a few weeks back. I just found time to upload the pics and recipe...SIGH! Time really flies!!!
Mix a cup of oats with a cup of rice flour along with adequate salt. Whisk it through such that the salt is incorporated throughout!
Keep some water boiling on the stove to be used to combine this mix and form a dough. Please use a spatula and not your bare hands as the mixture ould be very hot.
Dice up all your favourite veggies, make them look colourful. Sauté them lightly in a saucepan in a tbsp. of oil, a tsp. of cumin seeds and do add salt keeping in mind that the flour powder has salt in it.
I have used onions, green bell peppers, peas, carrots, yellow zucchini and purple cabbage. Do use as per the availability and the fondness you have for the veggies you prefer.
The hot water is poured into the oats and rice flour mix and kneaded well. The sautéed veggies go into this combined dough as well.
Form lemon sized balls with the cooled dough (cool enough that you can handle them) If the dough is sticky from time to time while shaping, rub your palms with oil and then handle the sticky dough.
Steam them in your steamer or an Idli vessel. These turn out as very healthy balls of energy as you got your oats in them.
You can sprinkle a handful of grated coconut over them while serving. It is entirely up to you!
Your assorted vegetable oats dumplings are ready! Eat them warm and do not overeat as they are quite tasty with the chutney. The cabbage may affect the tummy if overeaten!
Enjoy them with any spicy chutney!
