Paneer Toast With Dragon Fruit (adapted from Sindhu Kitchens)
How to scoop out the dragon fruit easily from its peel is seen in the following pics. Half the fruit with a knife and then insert a spoon between the flesh and the peel and easily scoop it out. I have done a recipe earlier with the purple version of this fruit. It is not a very sweet fruit and it is quite expensive here where we live.

I diced them like so and added them along with paneer toast (toasted cottage cheese) This was a recipe that I came across on my friend SSK's page Sindhu Kitchens on FB.
I used tofu instead of paneer. Her recipe requested us to marinate the diced paneer with half a tsp. of soy sauce, two tspn. of red chilli powder, finely chopped cloves of garlic, a tsp. of tomato ketchup, half a tsp. of pepper powder, salt to taste, freshly chopped cilantro and olive oil.
Whisk all the above ingredients thoroughly as she mentioned and then marinate the cottage cheese/tofu in them and set aside for a while. Later on, in a well greased or oiled skillet, toast these diced and well marinated paneer.
I skewered them on along with a dragon fruit bit as I felt it was a nice breakfast accompaniment.
