Chapathi Noodles

 Brussel sprouts and Power Puff Girls, I do remember watching those cartoons with my boys while they were growing up. I used to be so curious about this vegetable as the trio(the girls) never liked them, they would always say "YUCK" Back then it was not at all available in the markets.

Even now such exotic veggies (cherry tomatoes, broccoli, zucchini) come in small quantities in selective markets and I have been lucky to grab them when they do. They do draw my curiosity and attention and my butt is always on fire when I see them and am in a hurry to return home that moment and prepare them, I try to keep things minimal without over cooking them. I love the crunch.
 In this dish, I cut an onion or two into chunks, a handful of brussel sprouts, mushrooms and bell peppers and sauteed them in a tbsp. of olive oil. I had this chilly garlic momo dip that I had bought from the store quite recently and I used that as the spice to coat these veggies. I did not add any extra salt as the store-bought momo dip had salt as its preservative. Do not be tempted to do so as well! Let these veggies cook on a high flame preferably in a wok. Once they come together, that is when the mushrooms get a bit mushy, lower the flame and later on turn the flame off.
 Garnish with finely chopped spring onions.
 I had made rotis for our lunch. The husband had his rotis and the veggie as its side.

 For moi, I cut them into strips and mixed them along with a huge ladle of this veggie mix.This is a perfect idea to salvage your leftover rotis or incorporate certain veggies that your kids do not enjoy but may not spot them easily when tossed about like so. They would enjoy having this along with their friends hence the question of extracting those odd bits is ruled out.
You can have it or send it for lunch with ketchup or just have it plain. If you like to add a few salami bits or pepperoni or mix them with chunks of cheesy sausages, feel free to do so.
