Layered Chicken and Veggies On A Griddle

 First of all let me take this opportunity to wish you all a very Happy and Prosperous 2013! It'd been a quiet one for me. The best part was a few days earlier on I had my littlest niece and nephew over...I was literally excited since knowing that they were going to drive down along with their parents just to spend some time with us. There were too many things that I marinated and readied for them prior to their arrival so that I could spend a lot of time cuddling the twosome or yapping with them.
So this was some left over( flavoured and marinated by me) mince chicken.
 It had all the necessary condiments that go into minced chicken, you can check out any of my earlier post on the same, I did take care not to add too much salt as I would add cheese which was salted. So, I neatly arranged this chicken on a griddle that I often used at home. It helps to cook any meat faster as you can turn and place them on the heat on both sides, when one side is cooked, you can turn it to the other side and let it cook as well. I have also neatly arranged above it some sliced tomatoes, sprinkled some dry mixed herbs, rosemary, pepper powder and closed the griddle to cook, flipped both sides to allow both sides to cook thoroughly.
 In the meantime, I did have some left over boiled potatoes which I put into my blender along with an onion, half a floret of broccoli, flavoured it well with some spices -like chilly powder, garam masala,ginger garlic paste, cumin powder,salt and some spicy chicken masala. Once they were all incorporated well, I layered it over the minced chicken being cooked on the griddle on one side only, which had the sliced tomatoes over it. Thus I got a mish mash of the veggies used, you can add your own veggies of choice.

See the way the chicken turned out owing to the ridged surface on my griddle. It has the lines of Longitude over it :) Flipped it again to see if the potato-broccoli mixture browned a bit, then I sprinkled a nice heap of shredded cheese over that and let it melt on that particular side. Once I felt that the dish was cooked both sides, squeezed half a lime over it, sprinkled some chilly flakes over the dish for garnish. Do taste a bit of the dish, if you feel the salt is less, sprinkle some but do keep in mind that the cheese has salt in it,th meat is flavoured as well and your veggie part also has salt in it.

 Served it on a lettuce, I did spread some pesto over it before serving it. Husband and kids enjoyed it in between slices of brown bread and a lettuce. The husband did want some more spice hence reached for the Tabasco sauce. Yup!that's him posing for me :)
