A Vegetarian Spice Route-winter recipe

Chop two to three large onions and add them in two tbsp. of oil, once they brown, add ginger-garlic and two green chillies (the trio should be ground to a paste as well), toss in the chopped tomatoes, a tsp. of turmeric powder, a tsp. of coriander powder, half a tsp. of cumin powder, and a tsp. of red chilly powder. Let the spices mix well with the onions and tomatoes. Do add in the poppy & cashewnut mix and mix them all well. By now you can see the redness in your curry.
The more oil you use the tastier and richer this dish is. I have just used two tbsp. as it's too scary to see an oily dish! after all this will all emulsify in my digestive system! I don't want to die young!!!!!!!!!! I want to enjoy concocting dishes, write recipes and share with you readers :) so let the choice be yours.
While stirring this spice mix, slowly blend in some curd nearly half a cup, keep stirring and then introduce the drained cauliflower florets into the now spicy curd dish, add in adequate salt. You can dilute your dish by adding in water to the consistency you desire. Let the dish cook for some more time on simmer.
Check for salt, if desired add a tsp. of garam masala/some more chilly powder.Garnish the dish with finely chopped cilantro and serve it hot.
