Lemon Tea Cake
The oven was preheated to 140 degrees. Greased my baking tins and kept them aside. Kept aside the zest of lemon which equates to two tsp, also kept aside 2 tbsp of lemon juice. Also keep three eggs at hand.
Then the usual process in most baking scenarios-Beat the butter and sugar together till light and fluffy. Add the eggs one at a time mixing well as you keep adding the eggs. Fold in your sifted flour and baking powder. If you feel the batter seems thick add in some condensed milk/milk to dilute or loosen the mixture.
Add in the lemon zest and lemon juice and give it all a nice mix with the spatula. Don't overmix. Pour the batter into your greased cake tins and bake for thirty to forty minutes or until a toothpick when inserted in the middle comes out clean.
Once the cake is baked, allow it to cool completely for twenty minutes and then serve it as such or like how I have very roughly done a Royal Icing over it-one egg white,250 gms Icing sugar and a quarter tsp of lemon juice. Beat the egg white till frothy in a very clean and dry vessel,add in the icing sugar a tbsp at a time while constantly beating it. Once the Icing sugar has been added,pour in the lemon juice and by now the beater blades when lifted should forms soft peaks. This indicates that the icing is ready to be piped /spread over the cake.
That's it! as I am not too much into eating a lot of sugar although I love viewing the stuff people do with icing sugar et al, I have done a bad job of just spreading very lightly and roughly over the lemon cake.
I've added some fresh Kiwis as a decorative wall and tossed in some dino sprinkles for presentation. you can use any garnish/Icing u wish that blends with the lemon flavour of the cake-even a Chocolate Icing is good enough. I have done another cake with that, the pic will be uploaded in my next post :)
