Veg Rice sans any oil/ghee and Zucchini dal

Cooked some plain raw rice in my rice cooker, towards the last few minutes of the cooking process, I added in a bay leaf, cinnamon,two cloves and a star anise. Next I added in a sliced medium size onion, diced in a carrot and a handful of par boiled peas along with adequate salt and pepper.

The Rice is cooked so are the veggies. This is healthy as you haven't added any extra oil or ghee. Decorate it in whichever way you wish with a lemon wedge.

Serve with Papads, an onion raitha and a dal made with Zucchini

The Dal (split chickpeas dal and toor dal) was cooked in a pressure cooker along with finely diced Zucchini and onions. Once it was cooked, in a skillet in a tsp of oil/ghee ,let a tsp of mustard splutter in it, add ginger garlic paste,a tsp of turmeric,a tbsp of finely chopped onions and tomatoes, salt to taste,pepper corns and any spicy masala of your choice. I've added some chicken masala powder. Give it all a good stir and add it to the dal mix and serve with finely chopped cilantro. Serve it hot with the rice
