Purple Cabbage Egg Rice with Grilled Raw Banana

Hi readers, am back...The Cabbage egg rice-saute a diced onion with a few sprouts and half a cup of shredded, purple cabbage along with juliennes of ginger and garlic. Do temper the veggie mix with salt and lots of pepper,hot and sour tomato sauce and chilly vinegar. When this merges well, add in two ,beaten eggs and toss them about and then mix in your cooked rice. Check for seasoning, garnish with spring onions. Serve it hot.
The Vazhakka/Raw banana-I've sliced the raw banana very thinly, you can deep fry for a tastier/unhealthier version :) but I have just grilled them over my tawa/griddle by dabbing a bit of oil on my griddle and slid in these slices neatly, I have covered it so that they woud cook evenly, do flip them as well so that both sides would get a grilled appearance.Once grilled, I coated these slices with ground peanuts, cilantro,salt and an onion. I have decorated my rice with these grilled Vazhakka as a wall around the rice.
Grilled Chicken-you can use any of my chicken recipes to lay on top of the rice. Garnish with spring onions/or any greens for contrast.Serve with a nice salad, include fruits of your choice. I have just placed a few grapes along with my carrots,cucumbers,lemon wedges and tomatoes. This was Yummy!
You can also serve some pickle along with this rice. It does look dry, but it is indeed a healthy dish with minimal usage of oil or fat.
