Grilled Chicken in Green Chilly and Plum Sauce with Rice



Here, I have sliced the Zucchini,washed and drained a cup of fresh peas and also blended and kept aside some cilantro and onions. In a skillet in a tsp of oil, I added in the cilantro and onion mix and stirred it a bit, then addded in a few strands of dry Rosemary,then tossed in the sliced Zucchini, added salt and lemon-pepper, and then added in the peas and stirred them for  while till the Zucchini got cooked. At this point, I've switched off the flame and then sprinkled in my home-made bread crumbs infused with various dry herbs such as oregano,parsley and rosemary.



Left over rice was added to some chicken mince which had been stir fried with onions,carrots,soy sauce,salt,chilly vinegar, ketchup,salt and pepper,two beaten eggs and sping onions. Add any more spice if required otherwise the chilly vinegar and pepper should be sufficient.


This chicken was marinated in plum sauce and a lot of green chilly sauce. Added in salt and pepper as well with a nice tbsp of lemon juice and ginger garlic paste. Each breast piece of the chicken was sliced thinly and placed in this marinate for an hour or more till it was coated with this marinade. Grilled it on both sides and served it on a bed of cilantro with onion and ginger yogurt.
