Wraps/Burritos






Today, just a while ago I got a call from a very special friend from the UK.

This is for you SP, I was lazying around and your call was my mojo. Thank you so much SP, I did miss you as well, it was a lovely call and God it was just like the good ol'days, can't forget the days we spent together especially over your lunch box...as your home made food always tasted better than mine :) as I brought my box from my hostel :(

So,this is a lunch box idea dedicated to you...do hope you will read this and this would bring a tear rolling down your cheeks.

I've just made some normal rotis/chapathis and made them as a wrap. I've scrambled some eggs with onions,tomatoes,corn kernels,capsicum, a green chilly, sauted them well in very little oil/butter,added salt and pepper to taste.Garnished them with finely chopped cilantro. Add any other condiments that go with your version of scrambled eggs or what your kids prefer. 

I also made a spread with some triangular cheese-the good ol' La Vache qui rit( which always brings back loads of childhood memories)Put three to four cheese triangles in my blender along with three green chillies, cilantro, diced cucumber, salt and pepper. This is the white creamy spread that you see in the pic above. Spread that as the first layer on your roti, then spoon in your scrambled eggs(vegans can replace this with a tofu mix or any veggie mince), roll it and wrap it the way I've done.

Kids would love this as their evening snack or their afternoon lunch. So, SP thanks once again, love you to the core! Please be in touch more often!
