Stir fried mushrooms





Initially I took a bunch of spring onions, shredded ginger and garlic and processed them in my blender for the marinade. Added some black pepper and white pepper to it.

In a wok, I drizzled in a little bit of oil and tossed in some diced onions,green bell peppers,chilly flakes,chilly vinegar,tomato sauce,soy sauce and any seasoning that goes well with mushrooms. Then marinated the sliced, button mushrooms in the marinade made earlier and tossed that into the wok as well. Everything was stirred well and incorporated along with adequate salt.
Do have a taste and ensure that the mushrooms do not become too mushy and you do feel it a bit crunchy, arrange it like so as seen in the pics, those leaves help you to wrap the mushroom in each and we can roll and stuff the lettuce with the filling into our mouths. Garnish with fresh spring onions if you wish and a dash of lime.

Have them all fresh especially the lettuce, let them not be wilted! Chilled lettuce also tastes nice :)
