Naans/Leavened bread


(After five hrs or more)-Ok Readers...let me update this now. So take your all purpose flour(Maida), I've used a cup and a half,Make a well in the centre, into it add a tsp of salt, two tbsp of sugar,a tsp of clarified butter, two tbsp of curd, a tsp of yeast that has fermented in a small bowl of water...Knead all this quite well(you can use water to knead if all the mentioned ingredients don't help to knead it) and set it aside in a warm place to rise. The Yeast knows its job, so you need not worry!

Then, after a while, punch down the dough. Pinch out a small round ball from the mother dough and flatten it to the shape of your choice, oblong is preferable, I've made mine in weird triangles, a few I've pulled at it into oblong shapes.

On your griddle, oil it or spray it with the cooking oil, toss some Kasuri methi leaves(dry) also known as Fenugreek leaves and place your flattened bread over that and cook on both sides, a few of these leaves will stick on to the bread/naan. You can vary your naans-I've also used crushed garlic and finely chopped green chillies on another naan. You can also make butter naan by frying the naan with butter..please try out all combinations...anybody can cook!Good Luck!
