My Green with Envy Chicken






Marinate the Boneless chicken with ground,fresh cilantro, mint leaves, ginger, garlic,two green, spicy chillies,breadcrumbs,finely chopped onions and a dash of lemon. Set this in your fridge for around an hour or more for best results!

In a wok, a tbsp of oil is drizzled in, toss in this marinated chicken. As it cooks and changes colour, add in some pepper powder and salt to taste. To add to all the greeness of the dish...I've tossed in the green bell peppers and the long, green Bhaji(fritters made with this long green chilly) peppers. Added a tsp of sugar for some sweetness(optional). Do check for seasoning. I added in some crushed cashewnuts just for texture. After a while, the green chicken is served as shown in the pic.

The Rotis shown here are just kneaded with plain wheat flour, water, salt and a tbsp of oil. They are kneaded to a pliable dough and keep it soft by adding a little bit more ghee/oil. It should be very soft to handle. They are then pinched out in small balls and the balls are flattened out very thinly over a work surface dusted with flour powder and cooked on the griddle pan for a minute and then over the flame...you will see them puff up. Do not add any oil as it has been kneaded well with oil. Why consume oil/ghee in excess?
