Mango Curry
Just made a wholesome meal with the lentils shown in the pic. This is totally avoidable, I cooked a fistful of Chenna dal in the pressure cooker along with some cumin seeds, a tsp of turmeric, half a diced onion and half a tomato and a handful of very ripe mango.
Once it was cooked, I added to it some ground coconut,ginger,peppercorns,a tsp of cumin seeds and a green chilly. This paste mixture was stirred in quite well.You can leave the curry as such by just adding spluttered mustard,two broken,red,dry chillies and some sliced shallots to it.Do add salt to taste and adjust any seasoning to your liking.
I took it a notch further(optional)by adding two tbsp of fresh curd and then kept the dish on simmer for a short while.DOnot keep for long,the curd will curdle.Garnished with curry leaves/cilantro.
The first half is a dal based dish,the last half is a curd based dish.The combo was nice-sweet(owingto the ripe mango) and sour(curd).Normally people don't add dal and curd together in a dish...but like I always say...experiment and create more magic in your cuisine!
