Legumes on my plate



Take an assortment of  colourful and crunchy vegetables of your choice for a salad and dice them finely and toss them about in your vessel with salt and pepper. Squeeze half/full( to your choice) lime. Add in any sprouts that you have at home. Garnish with finely chopped cilantro. Add in peanuts if you wish or even shredded chicken or tuna. I've just done mine sans the meat. Serve it right from the fridge. It tastes better when it is cold.
Remember this is a meal on its own. You can avoid your breads/rice/rotis and just have this on its own. It is filling!

The veggies I have used are purple cabbage, green cabbage,onions,carrots,cucumber,green bell peppers, black moong dal sprouts,lime and cilantro
