The Humble Potato tossed with crunchy peanuts


A simple recipe with a vegetable I try to avoid always...Potatoes. I have it like once in a month...I don't hate it, I just try to skip having them as a part of any meal!
So, here I've boiled a few baby potatoes. In a saute pan, I've added a tsp of coconut oil for that smell, tossed in some diced onions,ginger-garlic paste, a tsp of fennel seeds and peanuts and my chicken fry masala powder, added in the boiled potatoes so that the masala/spices could spread evenly over the potatoes and the added salt to taste. The dish was garnished with some fresh curry leaves. That's the farmer's delight lightly pan fried!
