Coconut Rice with Dry Roast Chicken



Take a skillet and add a tbsp of ghee/clarified butter, in that oil add a tsp of mustard seeds, let it splutter, then add a tsp of urad dal/lentils, let it brown slightly, add in some thinly sliced onions and green chillies,a tsp of grated ginger, some curry leaves and saute the entire contents with adequate salt. Once they start turning brown, add in half a cup of grated coconut and as it slightly roasts, throw in your cooked, long grain rice. When it has almost merged together, garnish with half a tsp of coconut oil for the aroma and some fresh curry leaves. The coconut rice is ready!

In a skillet, drizzle in a tsp of coconut oil, put in your marinated chicken(the same recipe as shown in the previous chicken recipe post) make it very dry by letting it simmer in its own fat, keep tossing the contents around, do not use honey in this case, drizzle in another tsp of coconut oil and raise the heat a bit and let it appear as if it is going to burn but atually you are sort of roasting the chicken dry. Once it is done, garnish with diced onions,curry leaves and a lemon wedge. That's it folks!
