Broccoli rice with honey-mint glazed chicken

Marinate some boneless/ chicken with bones with ground, fresh mint leaves,green chillies, cashewnuts,ginger, garlic and salt. Rub the raw chicken first with some lime juice followed by fresh curd and then the marinade you just made. Keep it in the fridge for around four hrs. The chicken should seem drunk in the marinade :)


I've used a tbsp of ghee(guilty!) in a skillet, threw in the marinated chicken, allowed it to cook with a lid over it, kept checking it, when I felt it was slightly done, drizzled two tbsp of honey over it and waited for it to sort of caramelize the chicken. Garnished the chicken with some toasted Sesame seeds(white)


Used Basmati Rice, soaked it for half an hr, then drained it. In a heavy bottomed vessel, add a tsp of ghee (more guilty than ever!) saute some onions with a few cloves, cinnamon sticks and star anise. Add the tiny florets of broccoli (chop them small), once they all sort of look medium cooked, add the salt and the drained rice and pour in enough water to cook the rice in. Garnish with some coriander leaves, squeeze a bit of fresh lime over the rice and sprinkle some lemon-pepper powder. Check for salt. Toss the rice around so that the rice mixes well with the onions and broccoli. Keep a lid over for a while, add in a tsp of garam masala and some fresh chopped coriander leaves for spice in the rice. Your broccoli rice is done.

Serve the rice, you can garnish the rise with fried Cashewnuts and raisins( all optional) I kept it simple owing to the hungry people at home. Hmm...
