Okra fry/ Bindi fry/Vendakya fry

The Credit of this dish goes to my good friend Sindhu from my Yoga Class also from Sindhu's Kitchen(you can track her on facebook as well) . Just loved it Sindhu, this is dedicated to you...replicating your version with a slight variation. I cut the Okra about an inch long each. Had some masala peanuts at home, processed that along with two or three,dry,red chillies and a few cumin seeds and brought it to a ground paste consistency in my food processor.

In a wok, added a tbsp of oil, some diced onions, slightly sauted them, added a pinch of turmeric, the inch long Okras and the ground paste with a tbsp of salt. The dish gets cooked in no time. I did garnish it with slivers of a raw green mango that I had and a few curry leaves. As Sindhu says it can be eaten with Chapathy or rice. So please enjoy this yummy and healthy dish!
