Lime Pickle

Just looking at this makes me slurp and drool. I love pickles and do try to always make them with less salt although all pickles require a decent amount of salt for the preservation.

So today I decided to quarter a few limes that I had bought fresh from the market the other day. Added salt to it and kept it aside for a while. In a skillet, I added mustard seeds to three tbsp of gingelly oil, crushed ginger garlic along with green chillies and added it to the oil and sauted the contents for a while. To this mixture I added some turmeric powder and my ready made Pickle powder which basically contains chilly powder, asafoetida, fenugreek powder,ground mustard etc

Once the powders are roasted slightly, add the quartered limes to the mixture, by now there is a heavenly smell of pickle all over the house. Keep it on a simmering flame and then turn it off. Add a dash of vinegar which helps to preserve the pickle for a longer period. Garnish with some curry leaves as well.Please enjoy, the same recipe can be used to pickle any other veggie as well with the same powder. Do try with other veggies-a favourite in my home as a child was carrot pickle, mango pickle and lime pickles and Mama would make them all from scratch. Infact, she used to steam her limes whole before she added it to the oil. I always try to find the easy way out or try to skip steps...
