Beets with Double Bean seeds

Beetroot and Lima Beans(these were soaked overnight)

Grated a medium size beetroot and added a diced onion to it.

Let me be honest with you, these were supposed to be pressure cooked after the overnight soaking, I got so carried away that I added it to the beets and cooked it in the next step. It becomes softer when pressure cooked...Shucks! mine was just medium soft. So, pls pressue cook the soaked beans.

In a skillet or a wok, add a tbsp of oil, add mustard and cumin seeds, a bit of turmeric, then the Lima beans, toss them around, at this point you can drizzle in some water and ensure that the beans are soft and cooked well. Once the beans are cooked, add your beets and onion and salt to taste.

I've added my favourite leaves-the curry leaves, Gosh I could smell them all day...Psst, if they are fresh that is! and a diced a green chilly and added a dash of pepper for the spice. This is optional.

Don't let the beets overcook, I let it cook for a while by closing the lid so that the beets and the beans merge almost like a marriage between the two and then removing the lid soon after .

The beetroot and the double bean seeds were randomly chosen, you guys can mix and match as well. This was to show the contrast in colour, texture and taste. Remember-Cook.Eat.Share
