Always good to make your own bread crumbs

The yolks could be added to the mince instead and the egg whites alone could be lightly whisked for dipping the cutlets in.

The mince has been prepared and shaped to one's desire and lightly coated with flour(Maida)...

Dip the cutlet into the beaten eggs...

into the breadcrumbs(u may add some flavour to the crumbs if u wish...like mixed dry herbs,oregano)

All set to get fried

The Mince preparation-get ground/minced mutton. In your pressure cooker add some diced onion, green chillies,tomatoes, turmeric, peppercorns,ginger-garlic,salt to taste, your mutton Masala( I prefer to use Eastern masalas for lal my cooking), I did pulse some fresh green peas as well in this mix. This is one of the many tricks I play while cooking inorder to sneak in certain veggies that my kids despise or scoff at. So be creative and add your own as well but ensure that they are minced and blend well. Do add a nice fresh bunch of coriandro leaves and mint leaves.
 My mom alwys used to say Mint and Mutton are the best of friends.. Pressure cook the minced mutton with the above ingredients till you feel they are cooked well. Once it cools, do taste it and see if you have left out any ingredient, I do add a tsp of  Saunf/Perumjeerakkam which helps in digestion.  You can once again process all the above in your food processor to make it smoother. Then follow the steps as shown above.
