Drumstick Crepes or Moringa Omelette, Whatever...
From the previous post you already know that I got this beautiful bunch of drumstick leaves. I am documenting everything possible with the help of this fresh bunch that I got. More recipes will be added on whenever I source more leaves later on.
I love the smell of chickpeas flour/besan/Kadalamavu especially when they are fried. But it's ages since I had such fried stuff. I go on such a humungous guilt trip if I have those stuffed chilly bhajis or raw banana fritters or onion rings. I am not ashamed to admit that I crave for them from time to time and when I do have this craving, I go and sniff the flour and formulate recipes that will be a healthy Paradigm shift in my craving!!! I always have this feeling that I am in a lab rather than in my kitchen!
To a cup of Chickpeas flour add adequate salt, a bit of turmeric, half a tsp. of cumin seeds, a finely chopped green chilly, half a finely chopped onion and half a boiled sweet potato. The sweet potato gives it the sweetness it requires. Squish it all together initially with your hands and then form a batter which incorporates all the above ingredients seen in the pic with coconut milk. Add the washed and cleaned leaves into the batter and give it a nice swirl.
If you do not wish to use coconut milk, use water. Pour it until you feel a batter of reasonably good pouring consistency is formed. I have used the former. I took the cheat's way out and used the tetra pack version of the coconut milk.
I decided to do a healthy pancake, crepe or is it a vegetarian's omelette? What's in a name anyway!!! No don't scoot away declaring that or agreeing with me...A name and a photograph does lure you and me so everything is in a name where food is concerned and then follows its taste and fame!
So the batter is done and the greased griddle prepped and the crepe or omelette is neatly drawn. Use gingelly oil/Nallenna/sesame seed oil to prep the tawa/griddle.
We are not sashaying into any fashion show or walking the ramp so whatever shape it comes out is good enough! Flip sides once they seem cooked on both sides. Doesn't this resemble an omelette or even a double omelette?
Have it like so or like me with some left-over ginger chutney and these cherries. Cherries are in season now in India so do grab a pack or two.
There you go...you have just prepared a rice-free and vegan dish.

T'was really yummy and healthy with the goodness of those healthy leaves! The yellow is the natural colour of the chickpea flour and the lil bit of turmeric added!
