Courgette/Zucchini Muffins with Drumstick Leaves (eggless)
Am back again with yet another vegetarian delight. You could call it healthy as well but for the grated cheese in it perhaps...And yes I did have a few more drumstick leaves that I set aside to make a scrambled egg whites plus moringa/drumstick leaves combo and it too went into this muffin at the last minute.
Hence this would also come under the "Chronicles of Moringa Leaves" I am not going to do much writing here as the pics have been scribbled over with the recipe.
The recipe is indeed inspired from Bhavana's Kitchen (one of my favourite You tubers) and I have almost followed suit. But, in the recipe I incorporated Mozzarella cheese instead of the cottage cheese she has used and also used the strained curdled milk remnants instead of the sour cream which she has used. I did add a dash of lime to it to make it sour :)
A milk sachet of mine had curdled a few days ago. I had collected and strained the curdled remnants until it looked smooth and then refrigerated it with a dash of lime.
Add the wet and dry ingredients-water is added until you get a batter which is neither liquid nor solid-see pic below with the moringa leaves by its side.
The lovely healthy muffins with besan and rawa (chickpea flour and Semolina) have been baked in a pre- heated oven at 180 degrees until a skewer inserted into the muffin comes out clean.
The fact that it has no All Purpose flour/Maida and No Rice flour makes it a nice healthy muffin to take along for a group of health conscious friends or on a drive/picnic
The kids may not enjoy this as it is savoury and too healthy but one never knows! You could replace the zucchini with grated carrots. Get creative! Yenjoy!
