Beetroot Hummus
I had some left-over parboiled beetroot which I had set aside in the fridge after a small recipe that I have adapted from the net; I would update that as my #Thursdaytip on my facebook page...something I loved doing, something I have grown up having quite often...let me keep the suspense alive! I would definitely add that recipe as a new post and put a link herewith once I post that.
With that bit of diced beetroot I decided to go in for a beetroot hummus. I felt it ideal as everybody loves food platters and finger food and this was such a colourful yet quaint little dish. I followed exactly the same recipe as my Hummus with Chickpeas/Garbanzo beans http://potsnpans-peanuts.blogspot.in/2012/11/hummus.html just that I added this bit of beetroot to the remaining ingredients in the food processor.
Do let it process into a smooth creamy dish and then to be emulsified with the drizzled in Olive oil
Once it has reached the desired consistency for dipping serve the dish. I have garnished it with a few melon seeds to capture your eyes after all we Eat with our eyes first :)
Do serve and enjoy them with crudities, chips or Olives of your choice. This is yet another perfect way to get your kids to enjoy vegetables or surprising their friends at birthday bashes with chips or fries to dip into this.
