Spinach Frittata

 Eggs in your spinach or vice-versa, it's absolutely healthy and filling! A frittata or an omelette with finely chopped spinach along with the usual suspects-salt to taste, finely chopped onions, a finely chopped green chilly, pepper and a bit of grated coconut if you wish.
 If you prefer just eggs whites, just whisk that in. After such a long time we were having whole eggs along with the yolks. Such a world of a difference! The finely chopped palak/spinach was added to this and poured onto a well greased tawa/griddle.
 If you like more colour, do add the red spinach as well (Kerala Spinach)
 Flip when a side is done. Ensure that you moderate the heat such that it cooks all the way through but the omelette doesn't burn.
 You can use the same ingredients and scramble them instead as well. You may add American corn or sliced mushrooms to the same for colour and texture. It may take a bit longer though. If you are making for the kids, you may add grated cheese or cottage cheese (paneer/tofu)
 You got your dose of Iron for the morning. The husband and I shared this of course with our wheat pancakes and a spicy garlic chutney.
