Avocado Mayo & Avocado Devilled Eggs
The Devil is in the Detail in this recipe of mine so do pay attention keenly.
I had wanted to include Avocado/Butter fruit in my salads for some time and then chose to deviate from that recipe when I saw a few eggs lying around on my kitchen counter. I thought to myself why not make them devilish and alter the recipe altogether. I did want something creamy to store and stock for later to spread on sandwiches as an afterthought. With all these ideas floating about like a Halo around my head and a devilish grin, I decided to get the eggs boiling.
Peeled and set aside the hard-boiled eggs. Extracted the yolks from the eggs into a separate bowl. Then I went about toying around with the avocados. Remember, the moment you start slicing through the avocado, they start oxidising so keep the lemon at hand to squeeze into the halves of the avocado. Please keep in mind that this is a fatty fruit so deal with it keeping your health in mind. Excessive use of this fruit can be detrimental to weight conscious people so please be mindful. A harmless one but remember it is a very creamy fruit.
The avocado was pulsed along with half a lime juice, adequate salt, a clove of garlic, salt to taste and olive oil drizzled through once the avocado is pulsed well. The olive oil helps the mix to get creamy and emulsify as it is being processed. I just made a small batch of Avocado Mayo with one and a half avocados. Do taste if you feel the salt isn't right. You can make a huge batch to suit the needs of your family.
This is a healthier and egg free version of preparing a Mayo. You can use it on your sandwiches instead of Mayonnaise and you can feel good that you have chosen a healthier option in comparison to the actual Mayo. In this way you can sneak in that lovely green colour into your kids' lunch boxes. This is one recipe. The other would be to spike two tbsps. or more of this Avocado mayo with spices of your choice, I have used black pepper and a bit of cayenne pepper or chilly flakes and toss and smash it along with the yolks of eggs with the back of a spoon or a fork.
There are others who add Dejon mustard or Sriracha sauce to spike the avocado mix https://en.wikipedia.org/wiki/Sriracha_sauce I haven't!
You can temper it with mustard or a few dry chillies, half a finely chopped onion. Do taste and add salt to balance as it has now been added to yolks. Mix this well and this too can be used as a sandwich spread or as I have done, I have scooped this Avocado Yolk mix and presented them into the cavities of those hard-boiled eggs that you set aside in the beginning.
For a neater presentation, you may pipe this mix into the eggs. As this was just for my family, we had it like so.
Garnish them any which way you want, with bits of black olives or a sprinkle of pepper or a few finely chopped green onions.
