Carrot Muffins and A Birthday Wish to my Muffin!

Today is your birthday and you know I wish you well D!

I am also taking this opportunity to be grateful to one of my teachers as well. I may have written about her earlier as well but this time it is because we've crossed our hundredth bake on the BakeAlong that  I am also a part of. My friend and teacher has moved on in life breaking all barriers and paths in the baking line that I no longer come anywhere within her radius of thoughts or Good Mornings/Good Nights. I wish her many more happy moments to cherish.

I am just not able to keep pace with the BakeAlong and my interest has weaned off. But when I do have a situation or an SOS moment, that's the first place I go to for a thorough recipe. I am so grateful that with this baking along, many of us have moved on in life and become islands with all the practice and training online.

I remembered a lovely recipe of hers that she borrowed from the Joy Of Baking and how she handheld me and we went through the entire recipe starting from grating the carrots to inserting the skewer or toothpick to ensure that our bake was done.

The recipe is a keeper and it is my go to recipe whenever I have loads of carrot at home. This was also a part of the first baking class that I conducted the other day which I couldn't complete due to want of time. All the ingredients were weighed and grated but time worked against all of our lunch time... Managed to bake that today and send it across through one of the kids.

 I am awfully slow but steady but just can't keep pace with the others...lots of sugar and all ingredients not so nice and healthy involved in most bakes...hence choosing my bakes and baking at my own pace! Love it when my boys are home or when I can treat my neighbours' boys in my state.
 I didn't have walnuts at home so used raisins and cashews.

To many more birthdays and many more bakealong recipes!!!! I do not know if I would be able to do your celebratory bake to mark the 100th with all those Indian flavours as they don't beckon me but I toast to this space which led the light for many of us. Do watch this on Steve Jobs as and when time permits...As much as we would appreciate him, you would see how the fame and name gave him a kick...This is how people evolve and change. Very beautifully narrated. Will bring tears to our eyes-both the Happy tears and the Sad Ones. I was really touched...
