Rawa Kesari

Last night, my husband felt like having Rawa Kesari as a dessert when we were out for dinner. Unfortunately the hotel we were in didn't have that as their speciality for dinner. He was sad because there are just a few sweets that he enjoys and indulges in-Halwa, Kerala Boli and Rawa Kesari.

The first two are beyond my comprehension and I won't consciously go through the whole drill of the preps etc. It is not worth the time consumed in its preparation. I'd rather he have them store-bought. I promised him that I would make him the one he craved for last night.

I was positive that I had all the ingredients at home but warned him that I wouldn't make it very greasy (loaded with ghee) and too sugary. So all the ingredients have been adjusted to taste. Instead of the cashews, I used chopped almonds. I didn't have raisins at home hence skipped that as well. In this way I followed the following recipe :- https://www.youtube.com/watch?v=nK7_rloUmBI

Mine is mild in ghee and sweetness and just perfect for us. But if ever you have a guest coming over do try out the authentic version as shown in the video by Mrs. Mallika Badrinath.

He loved it and had this very cute smile and accomplished look on his face.
