Breakfast Power-packed Vegetable Bake

Got the writer's block. Unable to apply genuine emotions with my food posts. Found a good way to emote by listening more to the songs I grew up with...the songs a baby brother religiously made me listen and follow back in the eighties. Since then music is the world to me. Back in school I was always enrolling myself in dramas or solo singing. Would try to note down most of the lyrics and rote learn them. Our exposure was quite limited especially growing up in a bit of a conservative family. But I always made it a point to participate.

A wonderful array of veggies that I bought the other day lured me into creating this recipe. Incidentally it almost resembles the latest bake along recipe on Fondbites. I have not been very regular with my bakes there owing to the ingredients such as sugar and flour involved in most of the bakes. If my kids were home I wouldn't feel as guilty as I do feel these days as it is just the both of us and we do try to restrain from such sugary bakes. Nevertheless any savoury captures our attention.
It was so easy to put this together-eggs, breadcrumbs, spices/seasonings of choice, grated cheese, a pinch of salt as the cheese does have salt and a whole load of veggies of your desire. Combine all the ingredients together along with the seasonings, salt and pepper and pour them into the liners and bake at 200 degrees Celsius for around twenty minutes or until it is crisp and done.
I have used mushrooms, baby corn, shredded cabbage, peas, broccoli and topped them with stuffed olives. I used these worn out pretty cupcake liners to hold them together. I have so many of them that got flattened and am unable to use them to hold my cupcake batter as they lose the shape once filled. Hence thought this would be a wonderful way to use them up.
Cheese was grated on top as well and I also used some cheese powder to top it before and after the bake. It is the same orangish cheese powder that is used to sprinkle over the popcorn that we get in the theatres here. Spring onion greens can be finely diced and garnished over these breakfast roundels. Cute bakes that is quite filling...almost like a power packed breakfast.
You can avoid the egg yolks and keep it much more healthier but if you haven't been having yolks like how my husband and I, then adding the yolks to this bake won't hurt you in any way!
These are nice and quick lunch box ideas for the lil ones at home. Adding a bit of cream to the bake will also take it a notch further but do adjust and taste all seasonings.
