Aamras (recipe inspired from Curry Trail)
A while back an online friend of mine JR who writes on her blog Curry Trail posted a recipe on Aam Ras (which literally means mango juice) I was totally in awe of the recipe and could just feel the taste on my taste buds. Today I had decided to make Pooris for the family and remembered her aamras and those gorgeous pics.
She goes to such an extent and loads of genuine pain to entertain us, her readers with her food pics. Most of her pictures are that beautiful that the audience gets totally distracted by the pics than the recipe. I noticed that this recipe was such a breeze. Unfortunately I wasn't able to access her blog this morning as it seems to be under some kind of technical maintenance. She did let us all know that she was working on the links. So I had to jump from that inspiration and borrowed similar recipe from the net.
Google is such a kind friend...it gives you unlimited choices and variations from all over the world to choose from.
This is a kind of dip/sauce that goes with pooris more towards the Western states of Gujarat and Maharashtra, India. Out here at home, I do have my pooris occasionally with honey. But this was a nice change as well. Any luscious sweet mango is disrobed from its skin and made into a pulp in the blender. A dash of milk (optional) can be added to sort of blend it better, half a tsp. of cardamom powder and a pinch of ginger powder (optional) added as well and garnished with saffron strands.
Your Aamras is done! Do not add too much milk/water and dilute the dip. Let it remain like a pulpy mix.
Add sugar only if the taste of your mangoes remain tangy and less sweet. My mangoes were naturally sweet so I did not add any extra sugar.
Avoid mangoes that are too fibrous as we want a smooth blend. We do not want to strain the mix!
Did you notice my new bamboo shoots? A darling buddy of mine presented me this as a birthday gift. She made me a cake as well...will upload the pics as soon as I am a bit more free from my chores at home and commitments with family.
