Gooey Corn Cheese Toast (on bun halves)
With summer at its peak and the schools about to reopen I am very often reminded of the days I used to wake up real early to get three meals and snacks organized and packed for my kids. Phew! things are a lot better now and in retrospect, I can proudly say I did a reasonably good job! I continue to wake up early and when they are home for the holidays...work has matured to meet two proper adult tummies!!!
I thought I would share something I used to give the boys once a while as breakfast right off the griddle. You can pack this in some foil as well for your kids. It may not remain warm but it still will be gooey cheese corn on toast!
I did not use toasted bread here instead I toasted a few halves of buns and set aside. In a sauce pan in a tbsp. of butter I sautéed the finely chopped onions seen below and as it merges add two tsps. of plain flour and whisked that in until the raw smell disappeared and poured in three-quarters cups of milk to help thicken the white sauce. Thus the butter, flour, chopped onions and milk are combined ensuring that the flour has not clumped anywhere.
To make it appealing and colourful I have added in colourful diced bell peppers ( I ran out of green peppers otherwise that would have been an ideal contrast on this display) and grated cheese. If your cheese is salty enough please reduce on the seasoning. I assumed that the salt in the cheese was sufficient hence did not add any salt but had to correct that situation later on by sprinkling salt. So do season and taste!
I did tear a few fresh mint for colour, that is purely optional! Remember you get all these fancy sachets with various seasonings when you buy your pizzas etc. use two or three of them in this thickening sauce to add an extra punch and flavour.
Mix in the corn and let them all bubble away and cook for a while under a lid if you desire and then without the lid.
Your sauce should remain like so-gooey, stringy and of course tasty! Add crushed pepper powder over the toast after spreading this delectable gooey mess over your toasted bun halves!
Chilly flakes in those sachets can also be sprinkled over them for those who want it more spicy.
To be ideally had warm right after school or taken as a snack for school goers. This is easy of the working parents who are in a mad rush contemplating on what to fix for the kids' lunchboxes. I hope this will be useful to one and all who stop by.
