Zucchini Noodle Salad

 A very simple salad or side dish. All you need is the yellow or the green zucchini or both. Using your spiralizer or peeler get your vegetable to resemble a noodle shape. As I didn't have the spiralizer, I used my knife and shaped them like so on my cutting board. The finer it is, the more presentable it is!

Make your favourite salad marinade and immerse these strips in them for a while. I used a tbsp. of lemon juice and honey, a tsp. of pepper powder, soy sauce, chilly vinegar, a tsp. of tangy tomato sauce and adequate salt. Whisk them well and let these zucchini noodles rest in them for half an hour or more. You may lightly sauté them if you wish or leave them raw like so in the salad.

 Added them after lightly sautĂ©ing them into a wok containing spicy boneless chicken. Toss them through such that in each scoop you will get equal amounts of the vegetable and the meat. Make them fresh and serve. It will not taste as good if refrigerated and used later on.
The beautiful crunch and the tanginess of the lemon makes this a salad that you would pine for especially after a nice and harsh workout at the gym! One would enjoy these healthy proteins along with the veggie strips.
