Roast Chicken with Store Bought Spices and Crust and Crumb Mix

This was the second whole chicken that we grilled/roasted this year and this one was far better than the previous one on various accounts the first on the list being that we learn from our mistakes!!!

Inspiration for the pic that I drew is from the internet. I loved those musicians and was almost imitating the same that I saw and it resulted in my using this to lure my readers to go through this recipe.

Crushed loads of fresh ginger garlic paste. squeezed a whole lemon and set aside. I spread this along with olive oil all around the chicken. Salt has to be sufficiently added and that was one thing that lacked in the previous round despite the lovely flavour that the chicken had.

I used Chicken 65 masala as the marinade along with a new Cripsy Chicken Mix (Crust and Crumb) If you follow the instructions it results in lovely fried chicken. But I used this new mix to coat the chicken before putting the chicken into the oven.

This Crust and Crumb brand had the Pepper and Spicy flavour. I think it comes in two other flavours...at the moment I am unable to recall them. This was coated well along with the chicken 65, drizzled in olive oil and set aside over night to marinate.

 In a very hot oven 200 degrees C, the chicken was baked. I did tuck a few knobs of butter under the wings and within the cavities. I also placed whole garlic and that was indeed a priceless bake! Nothing like having such soft and almost creamy garlic coming out naturally from such baked whole pods.
I did check on the chicken several times, basted them in its own juices and with some more olive oil, flipped the chicken so that both sides would bake evenly, I did rotate the baking tray as well after nearly forty minutes. During the final phase of the grilling, I drizzled some honey over the top as my son loves honey coated chicken and it did do a marvellous job by caramelizing the bake.

All of us enjoyed it. It was a perfect blend of spice, lemon and a crispy honey crusted exterior. After almost an hour in the oven. we took it out.

The following three images are those of the previous bake...I had stuffed it with so many veggies so we had other things to dig in besides the chicken. The problem with this was it lacked salt, so we ended up adding salt as we ate which was not a healthy option!

 The beauty about such bakes is that I add less oil and it seems almost healthy and devoid of a lot of fat. Its own fat renders itself as a wonderful medium to bake with.
