Masala Paneer
Okay, so I had quite an unsuccessful tryst with my milk last week. It did curdle a couple of times. It was from the same guy that I go when I am lazy to buy from my usual vendor.
I hate the thought of bags hanging or tied outside the entrances of homes to receive these milk sachets while the owners are fast asleep or going about their routine. It's just something I do not like seeing on doors. A bottle of milk is different from a cloth/jute bag hung on the grill or door forever and ever Amen!
Where I live, everybody has got one. It just makes some homes uglier with funny bags on which various religious stuff are also scribbled. Anyway to each his own.
So I don't have a bag and I buy my milk from the supermarket or a green grocer whom I patronize.
I was unfortunate big time to have bought from this guy and the milk curdled thrice so Mr. Milk Guy with the handsome face, am not gonna visit u no more!!! I did complain to him not for a bloody refund but to make him aware that probably he keeps the sachets out in those crates for too long before he finally puts them in the cold storage. But, seeing him pull out his defensive shield, I retracted a bit and was prepared. The guy wanted to see the packets, told him I dumped them in the garbage and flushed the spoiled milk down the toilet. The guy wanted to see the garbage.
Okay Mr. Handsome face, you have a valid point in your defense but am not gonna extract stuff from the garbage to make a point here. End of story! I lost my money, got my milk curdled and walked to my green grocer and got my new sachets of milk.
When the milk curdled a second time, I thought to myself Ok, fine let me try to do something with this. And grabbed all the curdled milk together, squeezed some lime and sieved it well (do check out links on how to curdle and make cottage cheese or paneer)
I then placed the homemade paneer in the fridge.
After shaping them to the desired shape, I just rolled them in adequate salt, finely chopped cilantro and finely chopped green chilies and some chutney powder that I had at home. You can have them like so or grill them to add that charred look and taste.
Do keep in mind that store bought chutney powders have their own salt so do taste while mixing and rolling. Enjoy these simple delicacies.
The variety of leaves is yours, do mix and match. Lightly cooked purple cabbage, purple spinach all would look lovely on such rolled paneer!
