Tofu in a Pesto Marinade
My previous post was on the cilantro pesto -I took the pesto to the next level with my tofus.
Sliced the tofus like so, you can slice them in any which way you want. I chopped an onion very finely and mixed the cilantro pesto done in the previous post to the onions along with a tbsp of olive oil.
The pesto was rubbed generously over these sliced tofus and placed in the fridge for an hour and later placed on my ridged griddle and allowed to saute/fry on both sides. Do flip sides, when a side is done. As there is a tbsp. of olive oil mixed in the pesto marinade I did not use any on the griddle, but if you feel it requires, do lightly drizzle in some oil to avoid a sticky mess.
This can be placed between two slices of bread and grilled with cheese.
It can be further diced and skewered on toothpicks if you desire.
You can also have them with rotis or sandwich them in wedges of a roti.
