Lady's Finger In Coconut Milk

Hello folks, am back with the recipe. Sorry to have kept you waiting...so take the lady's fingers and cut them like so as seen in the picture. I had a few ripened Mulakka Bhajis (those chillies used as fritters coated with besan and deep fried). Those are those lovely veggies that you see in the curry. They are not really spicy. Thinly slice some onions and set aside as well.

As a tbsp. of coconut oil heats, add in some mustard and broken dry red chilly. Then toss in the thinly sliced onions and let them saute for a while, add the ripened chillies as well and to it add a bit of coriander powder and turmeric. As the lady's fingers cook and get tossed about in the masala, add in crushed ginger and garlic. Let them all get fried well. Add adequate salt. Taste and see if you are happy with the spice level, add a litle bit of Kashmiri chilly powder and a bit of garam masala powder to finish the dish.

The dish is finally graced with a nice cup of fresh/ store bought coconut milk. Do not let the dish boil once the coconut milk is added, let it be on a low flame and then switch it off. Sprinkle a few curry leaves to add to the beauty of this simple dish.

 Adding tomatoes along with the sliced onions is optional. It does add to the tanginess of the curry.
