Chocolate Muffins (Eggless)
This is an eggless recipe adapted from a section on Tea Time Treats by Nita Mehta.
I am out to display rather show off a few lovely cupcake liners presented to me by my SIL in the US. Oooh...love them, all animal prints!
Into the recipe now-Sift one and half cups of flour, quarter cup and a tbsp. of cocoa( I have ued Hintz that is why it is really dark), one and half tsp of baking powder and three-quarters soda-bi-carb and set aside.
Beat half cup softened butter and a cup of powdered sugar till light and fluffy.
Into this add the sifted flour and a cup of milk and mix well.
Add two tbsps. of raisins and two tbsps. of chocolate chips to this mix. I threw in a few chocolate coated raisinets (instead of the raisins) that my brother from the US gave me when he visited me this time.
Pour the batter into small moulds/muffin moulds in a preheated oven at 180 degrees Celsius for about twenty minutes. Bake until golden. You can sprinkle a few chocolate chips on top of each muffin before you place them in the oven. I haven't!
Decorate as per your desire :)
