Chicken Lollipops In Gravy


 This was not the dish I intended to prepare for the day and was indeed shocked that I didn't have any nice cuts of chicken at home. I just had chicken lollipops. "Beggars can't be choosers" hence stuck with the lollipops at hand and started on my gravy.

In a grinder, I ground some fennel, garlic, green chilly and ginger and set aside. In a skillet, I tossed in a tbsp. of coconut oil and allowed some thinly sliced onions to fry in that oil, As it browned, I threw in this ground masala and added to it some coriander powder, turmeric powder and allowed the whole spice to merge with one another. By now the smell of the ground mix is prominent. Add in some water and squeeze in some fresh lime juice and slowly slide in the chicken lollipops.Add a few finely sliced shallots. As they cook through, add in adequate salt and a tsp. of garam masala. Do not add too much water.
As the lollipops are small in size, they cook fast and in no time, they merge well with the curry. Taste for spice and the tanginess of that lime. Add some coconut milk and do not boil. Let it just become warm and finish the dish as they thicken once the coconut milk is added. Add curry leaves as garnish.

I served the dish in a nice bowl and there was some left over gravy in the vessel that I cooked in, I just slid in a few veggies like boiled potatoes and lady's fingers. Added a bit more coriander powder and salt and coconut milk. Garnished with lightly toasted sesame seeds. Ensure that the lady's finger cooks well.
