Tangerine On My Mind-Orange Cake

After a long hiatus, I am back...been busy with some personal travel and a few private thoughts. Enjoyed the company of my in-laws, a vist to my sister's and another trip to bond with my fav guys-my brothers.

All said and done, the impact of all that travel and "silent" introspections I had of life and relationships, took a toll on my health. Am on a road to recovery and this citrus flavoured cake was on my to do list. I always keep atleast two oranges at home, not a fav fruit with the family but I do occasionally like to sink into one and suck in all that Vitamin C!

Woke up early like how I always do...thanks Pa for that training of getting the four of us on our toes...Boy oh boy, the amount of work one can achieve within that duration is a lot especially when the rest of the house is fast asleep...Zzzzzz! Those two oranges looked at me, I looked at them and there was some telepathy going on there and I grabbed them quickly, juiced and zested one and sliced the other as garnish/topping.

225 g of brown sugar and the same amount of soft unsalted butter were beaten together until creamy, I preferred brown sugar to castor sugar. Slowly add four eggs one at a time to this mixture. Added in a tsp. of orange extract and the juice extracted from the medium sized orange. If you do no have the same, add juice from a tetrapack.

Slide in the zest of your orange as well & a tsp. or more of all spice(optional-used in plum cakes).
Fold in 225 g of self-raising flour. Once everything has incorporated well, pour the creamy mixture into a well greased pan of choice, you can sprinkle in chopped walnuts if you wish, I haven't.
Arrange the sliced oranges over the creamy mix before it goes into the oven.

Bake at 180 degrees until a skewer or toothpick when inserted comes out clean.
