A Quick and Easy DIY Pickle

 One of those days when you are pressed for time and working on deadlines that you set for yourself...that was today! I wanted a quick and easy cheat's way out to a pickle and it came in the form of a supposedly raw mango which started to ripen quite well...Oh Yumm!

I was juggling between phone calls, preparation for my students' ongoing exams, the work in the kitchen and a severe goof up of a recipe that I had written...but somebody edited the first para so badly that it just doesn't sound like me and it was as if it was someone else's recipe. Anyway, creating this simple pickle was therapeutic!

Diced mangoes with skin on along with diced Kiwis and tossed them about in Kashmiri Chilly powder, a bit of turmeric, asafoetida and adequate salt. Threw in a handful of peanuts as well! I loved this marriage of all these weirdos. Make it fresh and have...really yum and tangy.

One would drool by the mere look of all those colours.
