Onam/Onam Lunch-Pavakka Pickle



I have already done an old post on bitter gourd pickle but this time I felt it was quite different and tasted better. With Onam round the corner, I have been busy pickling a few veggies just for the husband and I. I did a sweet mango one which was wiped clean in two days-t'was really yummy owing to its slight sweet taste, then the lime is still there in the fridge and we do have it on a regular basis.
Both of us love bitter gourd and this time I was happy to cut them thin and in roundels. Once washed and clean just sprinkled in a bit of salt and turmeric powder and set aside for a while. Later deep fried the gourd in hot oil and let it drain. 

In another sauce pan in a table spoon or more of oil, I let the mustard crackle, some garlic, shredded ginger, a few curry leaves and tossed them about, once it turned brown I added in a bit of turmeric powder, a tbsp. of Eastern Pickle powder(if you don't have this, you can skip this part and just add chilly powder to taste) and let the ginger and garlic mix with the pickle powder. Do not let it burn. Throw in the fried bitter gourd next. Add adequate salt and pour in some vinegar and let the gourd and spices all get familiar and soon after switch off the flame. This pickle when cooled down should be stored in a clean and sterile bottle. Enjoy!
