Dry Prawns and Skewered Veggies
Had my loving friend and old kids' paedontotist and her family over for lunch as I wanted to reciprocate the grand feast that she and her mother-in-law had given us the previous week. Incidentally, it was our 21st wedding anniversary and what bettter day to toil hard and to come up with beautiful ideas to impress my loving guests.
Yes, I did overwork my butt off but it was worth every effort put in. I knew she could have prawns but didn't fancy chicken much hence decided to make chicken for her husband and boys and some prawns for her and skewered veggies for the whole family...Now who would resist that?
Thank u Supreme SeaFood once again for your prompt delivery. The husband enjoyed his fish and I made this set of prawns exclusively for my buddy. Pepper corns, shallots, dry red chillies, fennel seeds, garlic all coarsely crushed in my mortar and pestle and set aside. Clean the prawns and lightly toss them in a tbsp. of lemon juice and turmeric. Mix the above coarse spice to this prawns and set aside. In a tbsp. of oil in a skillet crackle some mustard added in freshly grated ginger as it slowly browns add in a tsp. of Kashmiri chilly powder, curry leaves and all the marinated prawns. Do not add any extra water, keep tossing them about till you feel all the pieces of prawns have been coated well. Add a table spoon of tomato ketchup for a bit of sweetness(optional) and salt to taste. Let them cook and merge well with the sauce and spices. Do taste and add in a cheek of squeezed lime. By now the prawns should be completely dry, if you want more spice add in a sprinkle of garam masala. Serve and have it nice and hot.
My friend did call and tell me that she enjoyed it as she took it home and had it all on her own.
The recipe for this is the same marinade for my Chicken Lollipops. Ensure that you marinate all the vegggies of choice-I have used boiled baby potatoes, coloured bell peppers, mushrooms, tofu, baby corns and onions. Coat them well and then grill them to perfection. I really enjoyed this and so did my guests. Infact I sent some for my friend to take along with her to carry on the next day as well. Also gave her some bamboo skewers. This was so yummy and tasty. Keep the veggies marinated for a while.
You can add these same dry prawns along with the veggies on your skewers. Yummy am sure...will try it the next time. Had to respect my friend's mother-in-law as she was a vegetarian.
