Tandoori Chicken & Baby Corn Parcels
Rinse and keep aside fresh iceberg lettuce, let them remain on ice if you want them to remain fresh.
Dice some boneless chicken to tiny pieces and allow it to cook in some sauteed onions tomatoes,chopped baby corns,ginger garlic paste and some tandoori chicken masala (Zaiqa-The Spice Store)Keep stirring it and let it cook under a lid. Once it is almost cooked(the babycorns do not take much time) I added a nice squeeze of my honey mustard sauce. Do add salt to taste and check if the spice suits you, if not add accordingly.
In another bowl I had diced a few muskmelon,some red pear,diced avocado,finely chopped onions and tomatoes, addd a dash of lime, salt and lemon pepper powder.Threw in a handful of roasted peanuts, some pickled gherkins, finely chopped cilantro and added salt and pepper. Please keep a tab on the salt being used here and there so adjust accordingly!
Take the iceberg lettuce and using it as a base, scoop a little bit of the veggies and fruits that you have diced and place it on the open lettuce, and then add the tandoori baby corns and chicken, garnish with some dry chives and chilly flakes.Enjoy by wrapping them together as a parcel and straight into your mouth.
You can make a lot of variations in this-add other fruits,spices like chaat masala/amchur powder or other vegetables or salad dressings and make it to your own taste and liking!
